Vinification techniques: The Moschofilero variety is the most suitable for making sparkling wine. Ode Panos proved us to be right. After careful vinification of the organically grown grapes from Domaine Spiropoulos’s vineyards, we transfer the still base wine into special tanks and a second alcoholic fermentation is initiated.
Analytical Data: Alcohol: 11% vol., Total acidity: 6.3g/l., Residual sugar: 13.8g/l., pH: 3.03
Tasting characteristics: Pale, bright silvery yellow, persistent with fine cordons, this wine has aromatic intensity with evident varietal character. Rose petals are at the front while the cool fermentation aromas contribute to the overall complexity. Creamy on the palate with freshness, veracity, intensity and length, a totally new experience.
